Mixing and feeding

In industrial cracker production, the mixing and feeding stages are critical for ensuring consistent dough quality and process reliability. Precise dosing of flour, water, fats, leavening agents, and minor ingredients is followed by controlled mixing to develop the desired dough structure, plasticity, and temperature. The mixed dough is then fed continuously and uniformly to the downstream forming systems (such as sheeters and laminators), often using hopper-fed conveyors or extrusion-based feeding solutions designed to minimize stress and maintain dough integrity. Stable, automated mixing and feeding not only improve product uniformity and texture, but also enhance line efficiency, reduce waste, and support reliable, high-throughput production.


Cutting and baking

These two stages define the final product’s shape, texture, and flavor. After dough sheeting and gauging, rotary or reciprocating cutters precisely stamp out cracker shapes, often incorporating docking patterns to control blistering and ensure even baking. The cut pieces are transferred carefully onto oven bands to maintain alignment and spacing, which supports uniform heat exposure. In the baking oven—typically a multi-zone convection or hybrid oven—temperature, air flow, and humidity are tightly controlled to drive off moisture, develop structure, and achieve the desired color and snap. Properly synchronized cutting and baking parameters help ensure consistent piece weight, minimal breakage, and a stable, crisp product with a long shelf life.
