The course provides an in-depth look at the manufacturing of chocolate and compound masses, from raw material to tempering and moulding methods.
The course covers the production of chocolate and compound masses on bead mills, as well as the mixing, refining and conching process. We will also demonstrate the technological correlations between processes.
You will have the opportunity to put what you learn into practice using our three-roll mill, our laboratory conche and our SmartChoc machine.
At the end of the course you will have a full understanding of all of the process steps and technology required to create maximum-quality chocolate mass, safely and efficiently.
