The Zonda RS can be used for roasting a variety of products like as cocoa beans and nibs, as well as various nuts, for example hazelnuts. Due to its ability to fulfill the crucial requirements, conductive batch technology is the ideal process for the craft and gourmet market.

Solution injection is available during roasting to allow an improved Maillard reaction.

The Zonda 100 RS focuses on optimal taste development as well as recipe differentiation. The optional solution injection during roasting allows an improved control and accentuation of the Maillard reaction. This process step allows new taste notes to be developed and thereby increases the differentiation potential.

Microbial Safety: The Zonda 100 RS Roaster includes a microbial inactivation technology for cocoa-nib and nuts roasting.

The roaster has a tested inactivation step for vegetative microorganisms. Using a salmonella surrogate, salmonella inactivation of log 5-6 for cocoa nibs at product temperatures of 120 ° C has already been successfully validated.
