You will learn about basic wafer production processes and gain knowledge in machine operation and production parameters. This includes cooler and conditioner residence times, baking speeds and temperatures as well as storage and holding conditions for ingredients and batter. We will also examine the interrelation between different settings. We will discuss inspection activities to determine necessary regular checks in the batter kitchen. This course covers personal protection, safety systems and emergency procedures.
