Bühler CoolCoreTM receives Ringier Technology Innovation Award 200807/30/2008 Bühler’s chocolate process CoolCore was recognized by Ringier for its outstanding contribution in the Chocolate Cold Forming Technology. Innovation award winners were chosen by a panel of independent judges “for their technical and product excellence, for making a significant technological contribution to China’s food & beverage industry.” This year’s event was organized by the China Food Manufacturing Journal and the Food Pacific Manufacturing Journal. Both magazines feature the award winners and the ceremony in their July issues respectively.
The award ceremony and cocktail was held during the 3rd Food Safety Technology Forum 2008 at the Renaissance Shanghai Pudong Hotel.
CoolCore allows customers to produce chocolate products with filling precisely according to their specifications and at the same time exactly control the thickness of the chocolate shells.
The CoolCore process
The innovation of CoolCore lies within the chocolate forming process: Melted chocolate is poured into a mould and distributed. Then, a cold stamp presses the chocolate shell into its shape. In a next step, the filling is being added. The product is either covered by a layer of chocolate or combined with another half.
So far, CoolCare is running at the site of one big customer in China, who is very satisfied with the results.
