More about Zonda Cocoa and Nuts
The Zonda 100 RS roaster has been developed for the market requirements of the "Craft and Gourmet Chocolatiers", which, in particular, focus on flavor development.

Small craft roasting plant at an attractive price (batch volume: 70-100kg).

The Zonda 100 RS roaster enables the craft and gourmet chocolatiers to bring their passion into the roasting process.

A high product variety and optimal taste development can be ensured by the conductive roasting technology.

The Zonda RS can be used for roasting a variety of products like as cocoa beans and nibs, as well as various nuts, for example hazelnuts. Due to its ability to fulfill the crucial requirements, conductive batch technology is the ideal process for the craft and gourmet market.

Solution injection is available during roasting to allow an improved Maillard reaction.

The Zonda 100 RS focuses on optimal taste development as well as recipe differentiation. The optional solution injection during roasting allows an improved control and accentuation of the Maillard reaction. This process step allows new taste notes to be developed and thereby increases the differentiation potential.

Microbial Safety: The Zonda 100 RS Roaster includes a microbial inactivation technology for cocoa-nib roasting.

The roaster has a tested inactivation step for vegetative microorganisms. Using a salmonella surrogate, salmonella inactivation of log 5-6 for cocoa nibs at product temperatures of 120 ° C has already been successfully validated.

Barley and malt roasting is a craftwork which requires a considerable amount of process competence in order to obtain the desired product properties such as the color and flavor (e.g. caramel, crystal, "winter warm", chocolate and roasted malt), and also yield.

The Zonda roaster is a tailor-made solution for craft and gourmet companies and is specially designed for small breweries and malt houses. Based on a unique functional principle, the system combines roasting and quenching technology in one machine, leading to optimal color and taste development.

Craft breweries and small malt houses can use the Zonda to achieve an optimal recipe differentiation within a 70-100 kg batch process.

A high product variety and optimal taste development can be ensured by the conductive roasting technology.

Special roasting profiles enable a differentiation of the final product with regard to aroma and color potential, which leads to a virtually limitless variety of recipe developments for maximum differentiation.

The Zonda roaster is a result of the systematic ongoing development process of tried and tested large-scale drum roasters. It is the small response to the markets demand for characteristic and dark craft beers. A simple process control system combined with the conductive roasting technology makes it possible to develop recipes for the entire product range available on the market.
